Our oil is extracted within 6 hours of collection, using a mechanical system which avoids bruising.
The oil is extracted in cold (less than 25 degrees C), no other substances are added and the oil is kept in nitrogen inert tanks. We use 100% ecological Arbequina olives.
As a result of this process we obtain a 0.022% acidity and a minimum stability of 2 years.
